This size and square shape is just right.
This cutting board is just the right size, and was commissioned by a local Kyoto craftsman. Its thickness allows it to stand on its own, saving space for drying, and its size means it can even fit in a dish drainer.
The hinoki wood material is much lighter than it looks, and once you've cut your ingredients, it's easy to move to the pot. Because it's square, you can use it from all sides, top, bottom, left and right, making it a convenient kitchen tool we recommend.
A beautiful piece of wood from Kyoto.
This cutting board is a traditional, sturdy piece. It's 2.5cm thick, giving it a bold presence, but that's its charm. It's perfect for those who don't like flimsy, sheet-type cutting boards. Despite its thickness, cypress is incredibly light and easy to handle. Northern Kyoto, where the material is sourced, is known nationwide as one of the nation's leading forestry regions. Kyoto's cypress, with its hot summers and cold winters, experiences large temperature differences, resulting in just the right amount of softness and toughness, making it ideal for cutting boards. However, Kyoto's forestry industry revolves around cedar, and cypress is scarce and difficult to consistently supply. Despite its high quality, it's rarely available. We were given this precious wood and had a Kyoto furniture craftsman process it.
The cutting board is simple, yet beautiful with no oversight in the details.
Of course, the good qualities of cypress remain intact.
Not only does it have a pleasant cypress aroma, but it also has the pleasant sound of old-fashioned cooking. Another feature of cypress cutting boards is that they are soft and elastic, so they won't damage the blade of your knives.
Cypress contains a moderate amount of oil, is resistant to dryness, and has excellent antibacterial properties.
This is a wonderful cutting board that is perfect for discerning people, but it's surprisingly easy to use.

To prevent warping, wet both sides before use.
If the surface becomes dry during use, wet it again.
The trick to making your cutting board last longer is to wash it with detergent using a scrubbing brush (not a metal one), pour boiling water over it, and dry it thoroughly after use. (Don't pour boiling water over it before washing it. The protein stains from ingredients will harden when you pour boiling water over it. The hardened protein stains will get into the scratches on the cutting board, causing it to rot and breed bacteria, so be careful.)
We also recommend washing it with coarse salt.

The color may be dark or white, but this is a natural characteristic of wood. It is not due to mold or drying.
●Never wash a wooden cutting board in the dishwasher as it may warp or crack.
●When you receive your product, there may be wet stains, but these are resins and are a sign that the wood is healthy. If you disinfect it with boiling water before using it for the first time, the sticky feeling will go away.
●You can use detergent, but be sure to rinse thoroughly to ensure that no detergent remains.
